About the Vendor: Torchbearer Sauces was founded by Vid, Ben, and Tim, three guys in their 20s with a knack for creating tasty condiments, fiery hot sauces, and tasty recipes with them. Besides creating a range of table sauces and enough recipes to fill a book, Torchbearer has also been turning heads with the world’s first habanero cheesecake.

So how did TorchBearer start, you ask? Well, like many great inventions, the sauce itself started as a fluke. Vid and Ben just happened to have lots of extra habaneros in their gardens that they didn’t want to go to waste. As a result, they decided to create a habanero preserve. Little did they know that it ended up tasting better than anything on the market —so, naturally, they decided to share a good thing.

The three guys took a few days off work, drove from Pennsylvania to Texas—and back (over 72 hours!)—and picked up 666 pounds of habanero peppers. They spent two weeks of chopping, bagging, and freezing the peppers so they’d have enough for the upcoming winter. It wasn’t long before they were making all the sauces themselves, by hand.

Armed with temporary labels and their first full batch of sauce, it was now time to see if the world was ready. The guys went down to the Cajun Hot Sauce Festival in Louisiana and won three national awards with their sauces. More awards started coming and it wasn’t long before the word started getting out.

About the Vendor: We are a small family-owned company started by my grandmother Hazel Donelson in 1991. My name is William Brasher, I am the operations manager of the current facility, and would like to take you on our journey back to the beginning where it all started to the present day.

Family Owner CompanyHazel was first introduced to the world of spices and seasoning blends in 1970 when she started working for Griffith Labs in Union City, Ca as a QC. At this time in 1980 Hazel went to work with former colleagues, at Associated Systems in Dublin, continuing to create seasonings and recipes for School Districts. During this time, in the early 80’s Hazel put me to work helping my grandmother make samples.

In 1988 Hazel went to work for Everson Spice Co. in Southern California. She created seasoning for prepackaged meat that would be displayed in Albertson’s and Lucky supermarkets in the meat department. I still made samples for her when Hazel worked on weekends and her husband Bill Donelson would help her at tradeshows.

In 1991 Hazel started her own company that was family run, Delta Spice Works Inc., in Union City, Ca. Her husband Bill became the mixer, packager, and would pick up ingredients they needed for all the seasonings she created. My mother Debbie Rumage would help with shipping and packaging. I continued to help package on the weekends. In 1995 Hazel moved the company to a bigger building in Pittsburg, Ca. Bill oversaw the warehouse and Debbie would do labels and accounting. I helped run the packaging equipment, batch formulas, and mix.

Our family was devastated by Bill’s passing in 2000. Shortly after in 2001 Hazel moved the company to Newman, Ca where she had lived for many years as a child. I would take on more of a management role. My mother would still work in the office and Hazel would do what she does better than most, create seasonings for anything and everything. If you could think it, she would create it.

The family involvement continued to grow in 2003 when my Uncle Vince (Williams)left behind his career and many accomplishments after 20+ years to join his mother in the spice business and become what remains today, the owner and CEO of the Company. Hazel continued to be the creative genius behind the formulas and still is to this day. I was Operations manager until 2006 when I decided to take an extended vacation to drive truck cross country.

The company continued to go through many changes up to 2007 when the Company became Hi-west Foods Inc. In 2012 I met my future wife from Australia, Julie-Anne Williams while playing a video game on my phone during my rest breaks in the truck. We were to marry in 2015 and both return to Newman on the request of my grandmother and Uncle Vince. I became the Operations Manager and in 2016 Julie-Anne became the QA/QC for Hi-West Foods.

Over the years Hazel has created so many formulas it’s hard to count. We’ve made and continued to make products for schools, prisons, restaurants, meat packing companies, and the list goes on, but never with our own brand. Chances are you have already seen some of our work and even tasted it.

About: Golden Rule Original White Sauce comes to us from one of the oldest barbecue joints in the USA that is still in operation. The Golden Rule opened its doors in Irondale, Alabama in 1891.

About the Vendor

One of the oldest barbecue joints in the USA is still in operation, the Golden Rule opened its doors in Irondale in 1891. Operated by the Williams family, the place was a popular stop for barbecue and beer on what was then the Atlanta Highway. In the 1930s electrician Jabo Stone married Ellene Williams and into the family business. For the next forty years, the Stones operated the Golden Rule. The Stones had no children to carry on their legacy, so in 1969 Jabo Stone approached Michael Matsos about taking over the business. Michael had been in the restaurant business for a few decades already, opening the legendary La Paree Restaurant and then his namesake Michael’s Sirloin Room in downtown Birmingham. Though he didn’t know much about barbecue, Michael saw a good business opportunity in the Golden Rule and took it over in 1969. In the intervening years the Golden Rule has expanded, not only its menu, but its presence throughout Alabama and the South.

Michael Matsos passed away in January 2012.  The Kemp Family purchased Golden Rule BBQ in 2022 to continue Michael's Legacy. Visit any Golden Rule BBQ location , to not only eat good bbq but to experience a piece of 130 year old history.

Mis Rubins White MagicVendor: Mis' Rubin's Seasonings (Birmingham, AL)

Size: 5.5 oz plastic shaker

Ingredients: Salt, Dehydrated Onion, Soy Flour, Spices, Garlic, Citric Acid, Dextrose, less than 2% of: tri-calcium phosphate (calcium salt) to prevent caking.

Amazing on: Seafood, pork, poultry as a dry rub. Awesome on veggies, pastas & salad. A nice compliment tableside.

About: White Magic is truly an all-purpose seasoning. It works great as a dry rub on chicken, fish, & pork, but it doesn’t have to be cooked!

It’s also wonderful tableside on pasta, salad, and veggies.

The hint of citrus in this seasoning really ties the flavor together and reminds us of Mis’ Rubin’s Greek origins. Use this seasoning to taste. It’s not overpowering.

Mis’ Rubin’s always had a special meaning for me. I grew up working in the Penny Profit butcher shop during the summers and was hooked on the seasonings from an early age. The atmosphere of a family business was really appealing. After working in another industry and geography for a while, I offered to fill orders for my grandmother as she was looking to slow down. We forwarded the business number to my cell phone and it started ringing off the hook! The customers on the other end of the phone were from all walks of life and spread all over the country. They were all thrilled to find out that their beloved spices were available through retail outlets and online! And they all had a story about how and when they found our seasonings. Mis’ Rubin’s was so much more than just another brand. Each customer had such conviction and enthusiasm about our spices. We believe there’s value in sitting down to a great meal with friends and family. We're grateful to be a part of that for many and are honored to continue the Mis’ Rubin’s tradition.

Our History

Our founder, Rubin Hanan lived out the true American Dream. He emigrated to the United States from the isle of Rhodes in the early 1920’s. He came through Ellis Island and wasted no time setting up his life in the states. He moved to Montgomery, AL where he had a family contact and soon met and married his wife and partner in business, Julia.

Together, they continued Rubin’s family craft by opening a meat market called Penny Profit near downtown Montgomery. Julia was called “Mis’ Rubin” as was custom at the time and she created many spice blends that gave them an advantage over the larger stores in the area.

Penny Profit became a famous stop in the region because of the popularity of the “Mis’ Rubin’s Seasonings”. Black, White, Creole, & Fish Magic seasonings have been on the market since 1935 and have been enjoyed by generations of loyal customers ever since.
