In the United States, the USDA grades beef primarily based on marbling (the intramuscular fat that makes beef juicy and flavorful) and maturity (the age of the animal). There are three core consumer grades:

  • Select: Leaner with less marbling — typically found in value grocery cuts
  • Choice: Decent marbling and tenderness — common in higher-end supermarkets
  • Prime: Excellent marbling, tenderness, and juiciness — usually served in fine steakhouses

But here’s the kicker: even USDA Prime doesn’t touch the quality of true Wagyu. Wagyu beef, especially the kind Fellers Ranch produces, is graded on the Japanese Beef Marbling Standard (BMS), which ranges from 1 to 12. Prime typically falls between a BMS 4 and 5. Fellers Ranch only sells beef that achieves a BMS of 6 to 10 — in other words, beyond Prime. As Fellers will tell you, “We’re not in the business of selling average. 3. Stress-Free Environment

Cattle are raised in clean, quiet, open environments and are handled with care to minimize stress — because stress negatively affects both meat quality and marbling. 4. Hormone-Free, Antibiotic-Free
