2 Tbsp Steak + Butter Seasoning by Old Southern BBQ
Peel the potatoes and parboil them on the stove for 8 minutes. Drain and let cool slightly. They should still be firm enough to hold their shape for smoking.
Preheat your smoker to 250°F using hickory, oak, or mesquite.
Quarter or eighth the potatoes depending on size, then place them in a grill–safe dish. Top with 4–6 pats of butter and season with Steak + Butter Seasoning by Old Southern BBQ and Tomahawk Jim’s Cracked Pepper Sweet ‘n’ Heat.
Smoke uncovered for 45 minutes to 1 hour, or until the potatoes are fork–tender and infused with smoky, buttery flavor.
Remove from the smoker and mash the potatoes in the same dish or transfer to a large bowl. Slowly incorporate the heavy cream, roasted garlic, and Original Golden Sauce by Golden Rule BBQ. Mash to your preferred consistency; slightly chunky works well for this loaded style.
Fold in the bacon, parmesan cheese, and green onions. Reserve a little of each for garnish.
Top with the remaining bacon, parmesan, and green onions. Finish with a light sprinkle of Steak + Butter Seasoning by Old Southern BBQ for flavor and visual pop.
