Ingredients

Mis’ Rubin’s White Magic Seasoning
Fat Boy Cajun Rub
4-5 lb Russet Potatoes (thinly sliced & skin removed)
8 cloves Garlic (minced)
2 cups Heavy Cream
1 cup Whole Milk
1 stick Butter
2 cups Shredded Mozzarella
2 cups White Cheddar or Gouda
¼ cup Chopped Rosemary, Sage, & Thyme

Directions

Preheat your smoker to 275 °F.
Soak potato slices in cold water for 15 minutes.
In a large cast iron skillet, add butter, garlic, milk, Mis’ Rubin’s White Magic Seasoning, Fat Boy Cajun Rub and herbs.
Place on the smoker at 275 °F for 20 minutes.
Slowly add 3 cups of cheese, folding in with a wooden spoon.
Remove once thickened, and let cool. Remove from the skillet.
Add potato slices to the skillet. Arrange in a spiral and layer, leaving minimal gaps between slices.
Pour cheese mixture back in, and top with remaining cheese.
Smoke at 275 °F for 45 minutes, or until golden brown on top. Let cool and serve!
