Ingredients
- Mis’ Rubin’s White Magic Seasoning
- Fat Boy Cajun Rub
- 4-5 lb Russet Potatoes (thinly sliced & skin removed)
- 8 cloves Garlic (minced)
- 2 cups Heavy Cream
- 1 cup Whole Milk
- 1 stick Butter
- 2 cups Shredded Mozzarella
- 2 cups White Cheddar or Gouda
- ¼ cup Chopped Rosemary, Sage, & Thyme

Large Cast Iron Skillet or Grill Safe Dish

Directions
- Preheat your smoker to 275 °F.
- Soak potato slices in cold water for 15 minutes.
- In a large cast iron skillet, add butter, garlic, milk, Mis’ Rubin’s White Magic Seasoning, Fat Boy Cajun Rub and herbs.
- Place on the smoker at 275 °F for 20 minutes.
- Slowly add 3 cups of cheese, folding in with a wooden spoon.
- Remove once thickened, and let cool. Remove from the skillet.
- Add potato slices to the skillet. Arrange in a spiral and layer, leaving minimal gaps between slices.
- Pour cheese mixture back in, and top with remaining cheese.
- Smoke at 275 °F for 45 minutes, or until golden brown on top. Let cool and serve!
