2 lb 80/20 Ground Beef

1 Tbsp Worcestershire sauce

4 Slices Sharp Cheddar Cheese

1 Tbsp Olive Oil (for searing)

4 Brioche Buns, toasted

8 Slices Cooked Bacon

Mayo

1 Large Sweet Onion, sliced

Directions
Prepare the patties: In a bowl, mix ground beef with Carne Asada Seasoning by The Spice Guy and Worcestershire sauce.
Form into four 1/2-inch thick patties (don’t overwork the meat).
Chill for 15 minutes to help them hold their shape.
Smoke the burgers: Preheat your smoker to 225°F using hickory or mesquite wood or pellets.
Place patties directly on the grates and smoke until they reach 125°F internal temperature (about 45-60 minutes).
Sear the burgers: Preheat a grill or cast-iron skillet to high heat (~450°F).
Brush patties with olive oil and sear for 1-2 minutes per side until they hit 135°F (medium-rare) or 145°F (medium).
While the burgers are searing, toast your brioche buns.
Top each patty with cheddar cheese and let it melt.
Create your spicy dill pickle aioli: Mix The Diller by The Spice Guy with mayo (start with a little Diller, then add more to taste).
Spread your dill pickle aioli on the bottom bun.
