Hey Rick, thanks for your comment! You don’t have to cover the Dutch oven, by leaving it uncovered you can get some great smoky flavor in there. As for using the convEggtor and rack and running at 225, that should work great! You may want to give it a good stir every 20-30 minutes to prevent burning as well, and at 225 it might just take a bit longer, that’s all. :)

Cool recipe! I’m going to give it a go. Can you please clarify if the Dutch oven should be covered or not? Also, since I’m going to do this in the Big Green Egg, I’m going to use my convEggtor, a rack and shoot for 225 to avoid burning the beans in the bottom of the vessel. Thoughts?
