Lime Chili Quick Kabobs

These kabobs have a great Southwestern flavor and don’t take too long to marinate.

Serves:  4


1-1/2 tbs red wine vinegar

3 tbsp olive oil

1 juiced lime

1/2 tsp paprika

1 tsp chili powder

1/2 tsp onion powder

Cayenne pepper to taste

1/2 tsp garlic powder

Salt and black pepper to taste

1 pound cubed boneless skinless chicken breast halves


Whisk together vinegar, olive oil, and lime juice in a small bowl, then stir in paprika, chili powder, onion powder, cayenne pepper, garlic powder, black pepper, and salt.

Stir in chicken, cover, and marinate for 30 minutes.

Preheat grill to medium-high.

Thread chicken onto each of four skewers.

Grill for 5 minutes, then turn and grill for 5 minutes more.
