Japanese BBQ Chicken Lollipops

Directions

1. Prep chicken drumsticks by cutting the tibia around the bone about an inch and a half from the ankle.

2. Pull membranes/cartilage off the ankle. Push the meat to the top to create the lollipop.

3. Cut off any hanging fibia/tendons. TIP: Use a sharp, heavier knife and sharp scissors to save time.

4.  Marinate chicken for at least an hour aqnd season generously with a dry rub.

5. Smoked at 250°F for 2 hours spritzing with oil of choice every 25-30 minutes.

6. Baste sauce over drumsticks.

7. Sprinkle sesame seeds and smoke for another 30 minutes or until 175° to 180° F internal.

8. Add Green onion and cilantro.

9. Drizzle more sauce over and dig in!
