🥓 What Are Pig Shots?
If you’ve never made Pig Shots, you’re in for a treat. They’re a grilling appetizer made from bacon and sausage “cups” filled with creamy, cheesy goodness. The edges crisp up perfectly on the smoker while the center stays rich and gooey. These little bites are easy to prep, cook beautifully over indirect heat, and are always the first thing gone from the platter.

Smoky, creamy, and a little spicy, these pig shots are a game day essential. Thick-cut bacon and sausage form crispy cups filled with cheesy jalapeño goodness, seasoned with bold chorizo flavor and finished with a kiss of sweet heat. They're handheld, bite-sized, and downright addictive.
Directions
Preheat your grill or smoker to 275 °F, using indirect heat, charcoal, wood chunks or pellets of choice.
Prepare the bacon cups: Slice sausage links about 1/2 an inch thick. Cut bacon in half. Wrap the bacon around the sausage to form a cup (it will resemble a rose). Using toothpicks, set the cup in place, leaving about a 2 inch space for the filling. Season with Chorizo Seasoning by The Spice Lab.
Smoke the cups at 275 °F for 30 minutes.
While the cups smoke, prepare the filling. In a mixing bowl add two blocks of cream cheese, 1/2 cup shredded pepper jack cheese and 1 Tbsp Chorizo Seasoning by The Spice Lab. Mix until combined. Add to a gallon zip lock or piping bag.
Once the bacon cups have structure and color, remove the toothpicks.
Cut the corner of the filling bag and pipe filling into cups. Add jalapeno slices to top. Smoke for another 15-20 minutes (until jalapeno is cooked).
Drizzle lightly with Hot Honey by The Spice Guy for a sweet-spicy glaze. Garnish with minced green onion.
