Heath Riles' BBQ Beer Can Chicken

INGREDIENTS

  • Heath Riles Sweet BBQ Sauce
  • Red Dirt Rich Old Pit Dust
  • 5 Lb Whole Chicken ((approx. 5lb))
  • Can of Your Favorite Beer
  • Olive Oil ((for slather/binder))
  • Beer Can Chicken Holder

Instructions

  1. Preheat grill to medium-high heat, lighting all burners (if gas).

  2. Remove neck and giblets from chicken and pat dry with paper towels.

  3. Apply olive oil to chicken, then coat liberally with Red Dirt Rich Old Pit Dust rub.

  4. Place a half-full can of beer at room temperature into beer can chicken holder.

  5. Turn off one burner and place chicken, upright, over the unlit burner for indirect cooking.

  6. Reduce to medium heat, targeting 325-350° F.

  7. Grill for an hour, or until reaching an internal temperature of 165° F.

  8. Liberally baste Heath Riles Sweet BBQ Sauce all over chicken, increase heat to high and grill 10 minutes to crisp the skin and caramelize the sauce.

  9. Remove from grill, rest 10 minutes, then slice and serve with more Heath Riles Sweet BBQ Sauce!
