First, get yourself a long, sharp knife with smooth edges.

Remove the leg quarter and cut it out. You can further separate it into thigh and chicken leg.

Flip the bird and remove the wings.

Start slicing the breast with short sawing motions to create even slices

Take your thumb and rub it along the breast bone to remove as much meat as you can.

Save the carcass for bone broth or stock
