These bold and beachy sandwiches feature perfectly grilled mahi mahi fillets seasoned with island-inspired jerk spices, tucked into toasted buns, and topped with a zesty, creamy chile lime slaw. The result is a vibrant balance of heat, brightness, and texture that delivers big Caribbean flavor in every bite.
Directions
Make the slaw: In a medium bowl, combine cabbage, carrots, pineapple, mango, cilantro, vinegar, lime juice, and salt. Mix well and let sit for 10–15 minutes while the fish cooks to allow flavors to meld.
Pat your mahi mahi fillets dry. Rub with olive oil, then coat generously with Jamaican Jerk Seasoning by Sauce Goddess on both sides.
Preheat your grill or griddle to medium-high heat. Grill mahi mahi for 4–6 minutes per side, or until the internal temperature reaches 140–145°F and the flesh flakes easily.
During the last 2–3 minutes of cooking, place the buns cut-side-down on the grill or griddle. Toast until golden brown and lightly crisp.
Assemble your sandwiches: Place grilled mahi mahi fillets on toasted buns. Top with a generous scoop of pineapple mango slaw and a light drizzle of Chile Lime Aioli.
