Braswell's Al Pastor BBQ Sauce: From Southern Pear Preserves to Bold Grilling Flavor

Braswell's Al Pastor BBQ Sauce is a 14 oz tomato-based BBQ sauce built on the al pastor profile: pineapple, chipotle, lime, onion and garlic. It works as a marinade, a late glaze and a taco sauce, and the heat is mild. It comes from Braswell's of Statesboro, Georgia, a specialty food company that started in 1946 with a single recipe for pear preserves, and it's one of five products in our Flavor Formation BBQ Box.

From a Truck Full of Pear Preserves to a Georgia Institution

Albert Braswell Jr. spent much of World War II aboard an aircraft carrier in the South Pacific. When he came home to Statesboro, Georgia in 1946, he had no job, but he did have his mother's recipe for pear preserves, made from the Orient and Kieffer pears that grew across the South Georgia countryside.

So he started canning them and selling jars out of the back of his truck.

Braswell's says the company began with one steam kettle and a bushel of local pears, and that same small-batch approach and attention to detail still shape how they cook today.

More than seven decades later, Braswell's makes preserves, dressings, mustards, marinades and sauces sold far beyond South Georgia, and still sources ingredients like pears, figs and Vidalia onions for many of its specialty foods.

Somewhere along that journey from pear preserves to a full specialty food lineup came a product that immediately caught our attention: Braswell's Al Pastor BBQ Sauce.

It's exactly the kind of unexpected product we love discovering.

Why We Selected Braswell's Al Pastor BBQ Sauce

Then Our Pitmasters Got to Work

For Braswell's Al Pastor BBQ Sauce, our team built several original recipes for the Flavor Formation recipe booklet. Two of them are below. They use similar ingredients, but the techniques are different enough to show how much range one bottle has.

Recipe Inspiration #1: Al Pastor Pork Tacos with Blackened Charred Pineapple

The first recipe takes the most recognizable al pastor combination, pork and pineapple, and puts it directly over the grill.

Thin strips of pork shoulder are marinated in Braswell's Al Pastor BBQ Sauce along with Blackened Seasoning by The Spice Lab, the savory crust builder from the same box. The pork then goes over direct heat, where the marinade caramelizes and picks up grilled flavor.

But the real difference-maker is the pineapple.

Instead of chopping fresh pineapple and adding it to the finished tacos, our pitmasters put the pineapple over the fire too, chasing dark, deeply caramelized edges. That does two things. Grilling concentrates the pineapple's sweetness, and the char adds smoke and a slight bitterness that keeps the finished taco from going overly sweet.

Once everything comes off the grill, the pork and pineapple get layered into warm tortillas with chopped onion, cilantro, fresh lime and optional cotija cheese. Sweet, smoky, savory and bright.

Pitmaster tip: don't be afraid of char. The most common mistake with grilled fruit is pulling it too early. You want visible caramelization. Those darker pineapple edges are what balance the sweetness of the fruit and the sauce, and that balance is what makes the taco work.

Recipe Inspiration #2: Al Pastor Pork Skewers with Charred Pineapple

For the second recipe, our pitmasters took the same flavor profile and made it even more tailgate-friendly.

Chunks of pork are marinated in Braswell's Al Pastor BBQ Sauce and seasoning, then threaded onto soaked bamboo skewers with fresh pineapple and red onion. The skewers go directly over the grill, where the pork takes on color and the pineapple starts to caramelize.

Because this sauce carries real sugar and fruit concentrate, one technique matters more than any other.

Glaze late

It's tempting to coat the skewers heavily with sauce from the start. Don't. A sugar-rich sauce over high heat for too long scorches before the pork is done.

Instead, let the excess marinade drip off before grilling, and hold back a portion of fresh, unused sauce. Brush that reserved sauce on toward the end of the cook so it has time to tighten, caramelize and cling to the pork without burning. Never brush with marinade that has been sitting on raw pork.

It's a simple technique, and it makes a huge difference. The result is savory pork, sweet pineapple, grilled onion and a sticky al pastor glaze on a stick that's easy to serve and easy to eat at tailgates, game-day parties, backyard cookouts, or on a casual weeknight.

Blackened Seasoning shows up here too.
