Peach Glazed Spare Ribs
Some barbecue leaves you with clean hands and a napkin you never touched. This is not that. These spare ribs come off the smoker with a peach habanero glaze that sets into a tacky, caramelized shell, and there is no polite way to eat one. Three hours of smoke, two hours wrapped, thirty minutes to set
Run the smoker at 250°F with apple or cherry if you want to lean into the peach notes, or oak if you want a deeper, more savory smoke behind the sweetness. Pull the membrane off the bone side, hit both sides with a thin coat of yellow mustard as a binder, and season heavily with the rub. Three hours on the grates undisturbed is where the bark and the smoke flavor get built, so resist the urge to open the lid and look at them.
The wrap is where spare ribs earn their reputation. Two tablespoons of butter, two tablespoons of brown sugar, and a quarter cup of the peach habanero sauce go on each rack before you seal the foil tight. For the next two hours that trapped steam breaks down connective tissue and pushes the ribs toward that pull-clean bite. Spare ribs carry more meat and more fat than baby backs, so give them the full two hours rather than rushing to the glaze.
The last stage is short and it is the one that separates good ribs from great ones. Unwrap, brush on another coat of sauce, and put the racks back on the smoker bare for 20 to 30 minutes. You are waiting for the glaze to tighten. Press a finger lightly against it: if it sticks slightly and holds its shape, they are ready. If it smears and slides, give them another 10 minutes and check again. Rest 10 minutes before slicing between the bones so the juices settle back into the meat.
