Ingredients
- 2 Tbsp Mango Chipotle Rub by The Spice Guy
- 1 cup Carolina Gold BBQ Sauce from Underwood Ranches
- 4 Salmon Filets
- 2 Tbsp Olive Oil
- Salt and Black Pepper to taste
- Fresh Cilantro or Parsley, for garnish (optional)
Directions
- Prepare the Salmon: Pat dry the salmon filets with paper towels to remove excess moisture.
- Drizzle olive oil over both sides of the salmon filets and season with salt and black pepper.
- Sprinkle Mango Chipotle Rub by The Spice Guy evenly over the filets, gently pressing it into the fish to adhere.
- Prepare the Grill or Smoker: If using a grill, preheat it to medium-high heat (around 400 °F). Ensure that the grill grates are clean and lightly oiled.
- If using a smoker, preheat it to 225 °F, using your choice of wood chips or pellets for smoke flavor.
- Grilling or Smoking the Salmon: Place the seasoned salmon filets directly on the grill grates or on a well-oiled grill/smoker rack.
- If grilling, cook the salmon for approximately 4-6 minutes per side, or until the flesh easily flakes with a fork. Ensure that the grill is covered during cooking to retain the heat and smoke.
- If smoking, cook the salmon for approximately 30-40 minutes, or until the internal temperature reaches 145 °F. Baste the filets with the Carolina Gold BBQ Sauce by Underwood Ranches during the last 10 minutes of cooking, allowing it to glaze and caramelize.
- Glazing with Carolina Gold BBQ Sauce: Brush Carolina Gold BBQ Sauce by Underwood Ranches generously over the cooked salmon filets, covering all sides. Return the salmon to the grill or smoker for an additional 2-3 minutes, or until the sauce is slightly bubbly and forms a delicious sticky glaze.
