Ingredients
-
Smash That Burger Seasoning by The Flat Top King
-
Coffee BBQ Sauce by Torchbearer Sauces
-
5 lb Chuck Roast
-
2 White Onions, sliced
-
1 small jar Roasted Red Peppers
-
4 Tbsp Calabrian Chilis (optional)
-
1 pack Provolone Cheese Slices
-
8 Regular Sized Hoagie Rolls or 16 Mini Hoagie Rolls
Directions
Preheat your smoker to 250 °F.
Prepare the meat. Apply a small amount of Coffee BBQ Sauce by Torchbearer Sauces to the chuck roast followed by Smash That Burger Seasoning by The Flat Top King.
Smoke the chuck roast at 250 °F for 3 hours or until internal temp reaches 160-170 °F.
Remove chuck roast and add to a foil pan or grill safe dish. Add 2 sliced onions, 1 small jar of roasted red peppers, 4 Tbsp calabrian chilis for that extra kick, and 1/4 cup of Coffee BBQ Sauce by Torchbearer Sauces. Cover with foil and place back on smoker for an additional hour at 350 °F
Remove the chuck roast once it reaches an internal temperature between 198-203 °F. Let cool and shred.
Toast the sub rolls with provolone cheese, and fill with shredded beef. Enjoy!
Recipe Note
Pro Tip: Needing a shorter cook or a longer cook? Feel free to smoke at 200 °F for 6 hours to get a beautiful smoke ring before the braising process, or smoke straight through at 325 °F for 3.5 hours and that will do the trick!
