Ingredients
-
Chicken and Waffle Wing Rub by PS Seasoning
-
Apple Moonshine BBQ Sauce by Southern City Flavors
-
1 Pork Belly Slab (3-4 lb)
-
1 stick of Salted Butter
-
12 Mini Waffles
-
4 Tbsp Maple Syrup
-
2 Tbsp Hot Sauce (Optional)
Directions
Preheat your smoker or grill to 250 °F.
Prepare the pork belly: Cut pork belly slab into 2 inch by 2 inch cubes and place on a baking rack.
Season with Chicken and Waffle Wing Rub by PS Seasoning on all sides.
Place on your smoker for 2.5 hours at 250 °F. Remove after 2.5 hours and increase temperature to 350 °F.
Add pork belly cubes to a foil pan or grill safe dish with 1 stick of butter (cut into cubes), 1/4 cup of Apple Moonshine BBQ Sauce by Southern City Flavors, 4 Tbsp of maple syrup, and 2 Tbsp of a hot sauce of your choice, if you want to add that extra kick.
Mix together, covering all sides, cover with foil, and return to your smoker. Smoke covered for 45 minutes then uncover and smoke for an additional 45 minutes.
Once pork belly reaches 200 °F, remove and let cool.
Add to either pre-made mini waffles or feel free to make your own waffles. Serve as sliders or open face appetizers and Enjoy!
Recipe Note
Pro Tip: When making the mini waffles, addChicken and Waffle Wing Rub by PS Seasoning to the mix for a total game changer! Take it to another level by adding pickled onion or candied jalapenos.
