Spicy Chipotle Aioli by Terrapin Ridge Farms

4 ears of Sweet Corn
-
Butter
-
Lime
-
Cilantro

Cotija Cheese
Directions
Begin by pre boiling 4 ears of corn in their husks for 10 minutes. Preheat your smoker to 250°F. Remove the corn from the water and place directly on smoker. Smoke for 30 minutes at 250°F.
Add ½ stick of butter to a grill safe sauce pan with 1 tsp Honey Chipotle by Red Beard and 1 tsp Mike’s Original by Southern City Flavors.
Remove the corn from the husks and baste with butter mixture once melted. Season corn with 1836 Beef Rub by Sucklebusters.
Continue to baste while the corn continues to cook for another 15-20 minutes.
Apply Chipotle Aioli by Terrapin Ridge Farms to the corn followed by freshly grated Cojita cheese. Once the cheese is slightly melted, remove and top with freshly chopped cilantro, the squeeze of a lime, and more of that Chipotle Aioli by Terrapin Ridge Farms.
Serve whole or cut into halves to serve more people!
