Ingredients
- 3 Tbsp Smoky Barbecue Rub by Rub with Love
- 2 lb Pork Shoulder (cut into large chunks)
- 1 Onion (chopped)
- 4 cloves Garlic (minced)
- 1 Tbsp Chili Powder
- Juice of 1 Orange
- Juice of 1 Lime
- 1/4 cup Olive Oil
- Flour or Corn Tortillas
- Toppings: Chopped Cilantro, Diced Onion, Diced Tomato, Sliced Avocado, Lime Wedges
Directions
- In a large bowl, combine the chopped onion, minced garlic, chili powder, and Smoky Barbecue Rub by Rub with Love.
- Add the pork chunks to the bowl and toss to coat evenly with the spice mixture.
- In a separate bowl, whisk together the orange juice, lime juice, and olive oil. Pour this mixture over the pork and toss to coat.
- Cover the bowl with plastic wrap and marinate the pork in the refrigerator for at least 1 hour, or up to 24 hours.
- Preheat your outdoor grill to medium-high heat.
- Remove the pork from the marinade and shake off any excess liquid. Discard the marinade.
- Place the pork chunks on the grill and cook for about 15-20 minutes, turning occasionally, until browned on all sides and cooked through.
- Remove the pork from the grill and let it rest for a few minutes. Then, use a fork or meat claws to shred the pork into small pieces.
- Serve the shredded pork on warm tortillas and top with your favorite topping and enjoy your delicious grilled pork carnitas!
