Ingredients

2 lbs ground bison, cooked (sub 93% lean ground beef)
4 large bell peppers
1 cup cooked cauliflower, grated (frozen cauliflower rice works too)
1 cup Mexican Cheese
1 can of Rotel, drained
½ TBSP Rainer Garlic & Herb Rub
½ TBSP Remy’s Competition Rub

Directions

Start with firing up your grill at 325°. Cut the tops off the bell peppers and then, remove the seeds and veins.
Combine ground bison, grated cauliflower, rotel, seasonings, and half of the cheese in a bowl. Stuff the bell peppers with the bison mix and top with the remainder of cheese.
Place on your grill and cook until the bell peppers become tender. Let sit for 10 minutes and then, SMASH!
