Bacon-Wrapped Filet w/ Grilled Romaine

Ingredients
- 1 Tbsp All Purpose Rub Mild by Loubier Gourmet
- 2 Thick Cut Tenderloin Round
- 1 strip of Applewood Bacon (per steak)
- 1/2 Tbsp Olive Oil
- 4 Tbsp Butter
- 2 cloves Garlic
- Herbs of your Choice (try Rosemary)
- 1/2 tsp All Purpose Rub Mild by Loubier Gourmet
- 1 small Romaine Head
- Half an Onion (thinly sliced)
- Half a Tomato (thinly sliced)
- Crumbled Blue Cheese
- 1 Tbsp Ranch Dressing
Roasted Romaine Ingredients
Directions
- Preheat the pan on high with no oil.
- Coat steaks with olive oil. Rub with All Purpose Rub Mild by Loubier Gourmet.
- Wrap a single strip of applewood smoked bacon around the rim of the filet, secure with a toothpick to prevent unraveling.
- Sear one side for a couple minutes until the preferred crust is developed. Try not to move the filet too much. When you flip the filets, sear for a minute or so, then begin to baste them.
- Add butter, garlic, and herbs. Once your butter has melted, grab a spoon, tilt the pan towards you and begin to pick the butter mixture with the spoon and pour it over the steaks. Feel free to put the garlic and herbs on top of the steaks while you do this. Do this for a minute or so, or until internal temperatures have reached 10 °F below your preferred level of doneness. Let the steaks rest for 10 minutes, until the filets successfully hit your preferred internal temperature.
- Serve with roasted romaine and enjoy.
Roasted Romaine Instructions
- Rinse romaine head in the sink, then cut in half and dry.
- Thinly slice onion and tomato for topping.
- On an open flame place, the romaine half cut side down for just 20 seconds just for color. Toss in the dressing and finish with a few pinches of All Purpose Rub Mild by Loubier Gourmet seasoning.
- Crumble blue cheese over romaine halves and top with tomato and onion.
- Serve with your filet mignon and enjoy!
